Red Potato Salad

12 C cubed red potatoes
1 C chopped green bell pepper
1/2 C minced red onion
1/2 C extra virgin olive oil
1/3 C red wine vinegar
2 T Dijon mustard
2 T mayonnaise
1 1/2 tsp salt

1/2 tsp

pepper

 

Preparation

  1. Cook potatoes, covered in boiling water for 10 minutes or until tender, drain well and cool. Avoid overcooking.

  2. in a large bowl, combine potatoes, bell pepper and onion

  3. In a small bowl, whisk together remaining ingredients. Pour over potato mixture, tossing gently to coat. Cover and refrigerate.
